Mother Rogers Swedish Meatballs

Traditional Swedish meatballs with a rich gravy featuring a secret ingredient of instant coffee.

Ingredients

  • 3-3 1/2 lbs ground beef (80-85% fat free)
  • 3 slices of bread smunched (soft bread crumbs – about 3 cups)
  • 1/2 cup dry parsley flakes
  • 1/4 cup dry minced onion (1/2-3/4 cups fresh chopped min)
  • 2 eggs
  • 2 cans (12oz) evaporated milk (1 can in meat, 1 can in sauce)
  • 2 tsp salt
  • 1/2 tsp ground ginger
  • 2 dashes pepper
  • 2 dashes nutmeg
  • 6 Tablespoons margarine
  • 6 Tablespoons flour
  • 3 cans of Beef Bouillon
  • 1- 1 1/2 teaspoons of instant coffee

Instructions

  1. Mix together 3-3 1/2 lbs ground beef, 3 slices of bread smunched (soft bread crumbs), 1/2 cup dry parsley flakes, 1/4 cup dry minced onion, 2 eggs, 1 can evaporated milk, 2 tsp salt, 1/2 tsp ground ginger, 2 dashes pepper, and 2 dashes nutmeg.
  2. Form small meatballs and place on cookie sheet.
  3. Bake at 325-350°F for 20-25 minutes.
  4. While meatballs are baking, make gravy: In large pan melt 6 Tablespoons margarine.
  5. Stir in 6 Tablespoons flour, making a paste.
  6. Stir in 3 cans of beef bouillon and cook, stirring constantly until thickened.
  7. Add 1 can (12 oz) evaporated milk and 1-1 1/2 teaspoons of instant coffee. Stir.
  8. Add meatballs to gravy and heat through.
